Candy Store Salted Caramels


A few weeks ago I played around and discovered the perfect MICROWAVE recipe for Salted Caramels. 



These are dangerously fabulous death by sugar yummy goodness. 
This recipe makes a full 9" x 13" pan so be ready to share. Or use a bigger pan for thinner caramels. 



Here is the recipe I came up with! 


1 Cup butter
1 Cup white sugar
1 Cup Brown sugar
1 Cup Light Corn Syrup
1 10oz can sweetened condensed milk

(Hey, I said death by sugar!)

Use a large glass bowl. it will expand and get very hot. be careful! Use potholders. 

1. Melt  Butter in microwave until liquid. 
2. Add rest of ingredients. Mix well.
3. Place Bowl in microwave for 5 minutes. 
4. Take out and stir well. 
5. Continue cooking for 5 minutes. 
6. Take out and stir well. 
7. Cook for 3 more minutes. 
8. Take out and stir well. 
9.Carefully pour into the pan. 
10. let set. I put it in the fridge to harden. will become a soft solid. 
11. cut and wrap pieces in wax paper for best storage.

Pumpkin Cupcakes

Fall is here and I'm bringing out the fall flavors in this weeks meal plan. Today I am making the cupcakes and they are AMAZING. I have made the ma few times and they really are fabulous. 



These cupcakes have a spiced cinnamon cream cheese frosting. My husband devours these so they are a extra special treat here in this house. 

I got the recipe from Pinterest and that led me to this tasty fall treat.

Chicken Tacos

Chicken Tacos

3-6 Chicken Breasts
1 pkg Taco Seasoning
1 can chicken broth
Mix seasoning and broth together till combined.
Pour over chicken breasts in crockpot.
cook 4-6 hours on low
Shred chicken inside crockpot, will shred super easy.
This is great for tacos, burritos, nachos, or salads.

South Western Chicken

Southwestern Chicken

1 sml. Bag frozen corn

1 can black beans
2 large frozen boneless skinless chicken breasts
1-16 oz jar salsa
Shredded cheddar cheese
Tortillas
Chips
Sour Cream
Cilantro
Avocado

Directions:


Pour bag of frozen corn in bottom of crock-pot. Place frozen chicken breasts on top pf corn and cover with rinsed and drained black beans, cilantro and jar of med. salsa. Cook on high for 1 hour, then on low for 4 hours.

Shred chicken with forks, serve mixture over tortilla chips and add toppings to individual servings. Or serve in tortillas.

For Freezer bag method: 

Add salsa to ziploc bag with chicken. On day of cooking add corn, cilantro and black beans. Cook on low for 4 hours

Simple Tasty Chili

Simple Tasty Chili

1-2 lbs Ground Beef or Turkey 
1 Can (15oz) Dark Red Kidney Beans
1 Can (15oz) Light Red Kidney Beans
3 Cups Medium Salsa
1 Can Tomato Sauce
Chili Powder to taste
Shredded Cheese
1 Cup Frozen Corn

- Brown meat. Drain. Add to crockpot
- Add remaining ingredients (except cheese)
- Stir and cover.
- Cook on low 5-6 hours
- Cook on high 3-4 hours
- Stir just before serving
- Top with cheese.

Simple Beef Stew

Simple Beef Stew

1lb. Beef tips/chunks
30oz. Jar meatless spaghetti sauce
3.5 cups beef broth

Chopped Veggies (I use at least carrots, potatoes, and onions)

- Add all too crock pot (you can first brown the outside of meat if you'd like)
- Cover and cook on low for 8 hours

Veggie Fried Rice

Veggie Fried Rice

8 Mushrooms or about 1 can Mushrooms (diced small)
1 Beaten Egg
3 TBSP Soy Sauce
3 TBSP white wine or oil
1 cup frozen/fresh green beans (diced small)
1/2 cup Celery (diced small)
1 onion (diced small)
2 cups cooked rice

Pepper

-Chop mushrooms
-Combine egg, soy sauce, wine, and 1/2 tsp pepper. Set aside.
-Heat oil in skillet on Med-High heat.
-Add veggies and stir 3-4 minutes.
-Add mushrooms.
-Add rice.
-Drizzle Egg Mixture over.
-Stirring constantly cook 6-8 minutes

-makes 4 cups.

Little Smokies

These are a hubby's favorite! 

Little Smokies 
also known as Little Wieners

2 1/4 cups BBQ sauce (1 18oz bottle)
1 cup brown sugar
1/2 cup sugar
1/3 cup chopped onion
2 16oz pkgs little wieners

Stir together in crockpot

cook on low for 2-3 hours

Bourbon Chicken

I'll get a picture next time I make this. It was so yummeh that it will be a new stable meal here. 

Ingredients:
4-5 chicken breasts
2 tbsp Oil
1 tsp Garlic
1/4 Cup Apple/Pineapple Juice (I use apple)
1/3 Cup Brown Sugar
2 tbsp ketchup
1 tbsp apple cider vinegar
1/2 Cup Water
1/3 Cup Soy Sauce (I use a low sodium)
A pinch of red pepper flakes
1 tbsp corn starch

Directions:
Cut your chicken into 1-2 inch pieces
Heat up a large skillet over medium high heat.
Once pan is hot Pour Oil in.
Add Chicken and let cook for 10 min. stirring occasionally. The Chicken will get a bit juicy and bubbly. Drain juices. and continue cooking over med./high heat.
In mixing bowl, combine garlic, fruit juice, brown sugar, ketchup, apple cider vinegar, water, soy sauce, pepper flakes, and cornstarch.
Whisk all together until cornstarch is dissolved and all combined.
When chicken has started to brown, pour sauce into pan. Stir to cover all pieces.
Reduce heat to a low simmer and cover with a lid at and angle (to allow steam to escape) and simmer for 20 minutes, stirring a couple times. 

Serve over rice. 

I made extra sauce and served over rice and broccoli 
SO TASTY.

BBQ Chicken


Boneless, Skinless Chicken Breasts, I used 4
Chopped White Onion
BBQ Sauce

Combine all ingredients in a Gallon Size Freezer Bag. 
When you are ready to cook this, put all ingredients into a crock pot and cook for 3-4 hours on high.

Chicken Broccoli Alfredo

Ingredients:

1 ½ pounds chicken breasts
1 (16 oz) bag frozen broccoli florets
2 (16 oz) jars Alfredo sauce (I use light)
1 large green pepper, chopped
1 (4 oz) can sliced mushrooms, drained

Directions:

Place all ingredients in a resealable gallon-sized freezer bag and mix together.
When ready to eat, remove from freezer and thaw ahead. Cook on LOW for 4-6 hours. 
Serve with cooked fettuccine noodles.

Chicken Noodle Soup

This one works great as a freezer meal I just put everything but the noodles in a bag and freeze it! Thaw ahead and cook when ready. This recipe says to used coked chicken but I put chicken breasts in the crock pot with the rest of the ingredients. I cut it up into bite size pieces when it's cooked through and I add the noodles. 

5 cups chicken broth
1 10.75oz can cream of chicken soup
1/2 cup onions, chopped fine
1/2 cup celery, chopped fine
1/2 cup carrots chipped fine
1/2 cup green onions, sliced
1 15oz can whole kernel corn drained
S&P to taste
1 1/2 cup egg noodles
2 cups cooked chicken

Add everything but the noodles and cooked chicken to the crock pot on low for 5-6 hours 
The last hour turn on High, and add noodles and chicken.

Mint Chocolate Chip Cookies




I have been asked by a few people to share my mint chocolate chip cookie recipe. These are some of the best cookies out there and so easy to make.

Normally I bake all from scratch. I know this would be easy to adjust the recipe I just haven't done it yet. If you do.. Let me know!

Chicken Sweet Potato Stew



Not the prettiest picture but it sure was tasty.
 As you can see we ate half of it! 
It took just barely 6 hours on low before it was cooked for me.
The only thing negative, (if you can even call it that..) Would be how strong the scent was. It smelled like spiced tea or even cider but tasted just like it should. My husband claimed it messed with his head as the scent and taste didn't match! But it was amazing either way. I served it with fresh Pillsbury crescent rolls. 

The Recipe...

Chicken Sweet Potato Stew
4 boneless, skinless, chicken breasts - cut into bite-sized pieces
2 med. Sweet Potatoes - Peeled and cubed
2 med. ptoatoes - peeled and cubed
2 med. carrots peeled and cut into bite-sized pieces
1 tsp. Salt
1 tsp. paprika
1/2 tsp black pepper
1/8 tsp ground cinnamon
1/8 tsp ground nutmeg
2 cups nonfat, low-sodium chicken broth
1/4 cup fresh basil, chopped
Combine ingredients minus broth. add to a gallon ziplock bag. Freeze. Thaw and add broth and cook on LOW for 6-8 or on HIGH for 3-4 hours in crockpot


Tomato Basil Parmesan Soup





This is the best soup for tomato soup fans. I am not the biggest fan of tomato soup But I really liked this. I am pretty sure it might ruin canned tomato soup for you though. ;-) 

Tasty Crock-pot Chili


1-2lbs Ground meat
1 can (15oz) Dark Red Kidney Beans
1 can (15oz) Light Red Kidney Beans
3 Cups Salsa
1 Can Tomato Sauce
Chili Powder to taste
1 cup Frozen Corn
Shredded Cheese

* Brown Meat, Drain, Add to crock pot.
*Add remaining ingredients (except cheese)
*Stir and cover

Cook on low 5-6 Hours
Cook on High 3-4 Hours
Stir before serving
Top with cheese.

Parmesan Chicken


Parmesan Chicken. 
(Husband's Favorite!)

Oven: 400* F
1/2 cup Parmesan Cheese
1 envelope Good Seasons Italian Dressing Mix
1/2 tsp. Garlic powder
4-6 Chicken Breasts depending on size

*Mix Cheese, dressing mix, and Garlic powder
*Moisten Chicken if needed with water and coat with cheese mixture.
*place in shallow dish.

Bake 25min or until full cooked.
